Alexis Gauthier is a Michelin-starred chef firing on all cylinders. His daring marriage of classical French technique with seasonal British produce results in a repertoire of graceful dishes that chime effortlessly with the calendar. A springtime starter of smoked eel tartlet with quail’s egg shows a beautifully light touch, while perfect balance is the key to a main course that matches squab pigeon with asparagus & crayfish. Gauthier also has a very un-Gallic obsession with vegetables, offering a £60 menu légume that might include asparagus velouté & Fourme d’Ambert (blue cheese) soufflé. There’s also a £70 tasting menu & a range of dishes designed to explore ‘umami’– the much-vaunted fifth taste. Discreet, efficient staff look after the locals & business types who populate the understated dining room; the mood is grown-up yet relaxed. A £35 three-course lunch menu is an ‘absolute steal’.
